Remember all my big talk about being more deliberate about my content and my blah-blah-blah about scheduling what I cook weeks in advance? Well, scrap that! I did have a list of recipes I was going to work on this weekend but then I saw photos of these leche puto on my FB newsfeed today and all plans were kicked to the curb. I just had to make them ASAP!

I know how to make smooth, velvety leche flan and I've learned the secret to soft, fluffy puto months ago but how to put them together into one sweet treat in two delectable layers? I had to look to Google for answers. And sure enough, I found after a quick search what seems, judging from the number of complimentary comments, to be a solid recipe/tutorial at Heart of Mary. And guys, puto flan is just one of the delicious things you'll find there.  I am totally blog-crushing! I've never seen so many cakes and dessert recipes I want to try in one place! These puto flan came out so perfectly soft, fluffy and yummy, I have high hopes for her special ensaymada to be just as wonderful.

Ingredients

  • 2 tablespoons butter melted

For the Flan

  • 4 egg yolks
  • 1 can (14 ounces) condensed milk

For the Puto

  • 2 cups flour
  • ⅔ cup sugar
  • 4 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cup water
  • 4 egg whites

Instructions

  • Prepare puto molds by lightly brushing insides with melted butter. Set aside. Add water to lower bottom of the steamer and bring to a boil.
  • In a bowl, combine egg yolks, condensed milk, and calamansi juice. Stir together in a circular motion until smooth and well blended.
  • Fill molds to ⅓ full of the flan mixture. Arrange in a single layer on the steamer basket. Wrap steamer cover with clean kitchen towel. 
  • Steam flan at low heat for about 5 to 7 minutes or until mixture is no longer liquid but not fully set. Remove from heat and allow to cool completely.
  • Meanwhile, in a large bowl, sift together flour, sugar, baking powder. and salt. Add water and egg whites. Stir together until just combined. 
  • Add puto mixture over flan, filling molds almost to the top. Steam on low heat for about 8 to 10 minutes or until puto has risen.
  •  Remove from heat and allow to slightly cool. Gently remove leche puto from molds.

    1 1/4 ounce of condensed milk or 1 1/4 can of condensed milk? I only used 1 1/4 ounce and it turned out still sweet and yummy

      It's actually 1 can which is 14 ounces. I apologize for the confusion, I corrected the recipe card to make this clearer. Thank you so much for bringing it to my attention.

    Hello po, i tried this today but the flan turned out really sweet. I changed the recipe from 1&1/4 cup condensed milk to 1/2 cup condensed milk and 3/4 cup evaporated milk as i know that putting only condensed milk will be really sweet.

    Is there a reason why it’s only condensed milk? When i make leche flan i use condensed and evaporated milk. Why only condensed milk on this puto flan?

    Need help please 😁

      Hello Christina,

      Hindi linalagyan nang evaporated like leche flan dahil you want it to set quickly nang hindi ma-overcook yung puto sa baba.

      It's 1 1/4 cups which will be 10 ounces. 🙂

    You said in one comment that you didn’t alter Heart of Mary’s recipe. But when I checked it, hers is 1 1/2 tsps baking powder while yours is 4 1/2 tsps. So, which one?

      Hi Jec,

      The Heart of Mary's recipe uses self-rising flour and 1 1/2 teaspoons baking powder but I used regular all-purpose flour so I had to increase the amount of baking powder to make up for the baking powder already in self-rising flour. It really is the same, I just basically made my own self-rising flour by combining flour and baking powder.

      You can omit kung wala kayo or use lemon extract 🙂

      I don't think pwede siyang ibake kasi moist heat dapat, magiiba ang kakalabasan. It might work sa oven kung mag bain marie ka. May malaki ka bang oven safe ka ba na dish na may takip? Lagay mo yung puto molds sa dish na may konting tubig then takpan mo and then bake 375 F. Ganito kasi way ko to cook leche flan as the bain marie mimics yung pagsteam, I think it will work sa puto.

        thank you so much po ms. lalaine. the reason why im planning to bake it is because my steamer is small and the mold that i have is the cupcake pan. haha! so i guess i just have to purchase individual mold to fit into my steamer.

    I've tried this recipe even though its not same on the pic to what i have made.... BUT i am satisfied as my parents and my friends said that its delicious and they want this for new year... thanks ms.Lalaine for sharing this recipe. 🙂 :-*

      Hello Judy,

      Calamansi is a citrus fruit, https://en.wikipedia.org/wiki/Calamondin. You can substitute limes.

    How am I going to reduce the ingredients if I just wanted to make let's say a dozen of puto? Is it also possible if I cook them together at the same time?

      I used the smallest size, I believe they're one ounce capacity.

    Hi, i tried your instructions, but the leche flan were not successful in turning to solid, i tried to cook them for 5 mins for atleast 3times still not solid. But i tried the puto on separate molds, they went successful. I dont know what went wrong on the leche flan

        Hello Gina,

        I don't really know why the flan didn't set. If the ingredient amounts and the instructions were followed, the leche flan should have turned out fine.
