Filipino coconut macaroons are your new favorite baked treat! Soft, chewy and chock-full of coconut flavor, these mini cupcakes are addictive.

Coconut macaroons are available at most major supermarkets here in the U.S., but although equally delicious, they’re a little different from Filipino coconut macaroons I grew up with which are denser and cake-like in texture.
Fortunately, a friend of mine emailed me a PDF of recipes from the Center of Philippine Concerns including one for macaroons. As I read through the list of ingredients, I knew it was the Filipino version I’ve been looking for!
Sure enough, the addition of flour to the basic ingredients of sweetened condensed milk, butter, eggs, and desiccated coconut resulted in more authentic Filipino coconut macaroons. Crisp and golden on the outside and moist and chewy on the inside, they’re addictive!
This recipe yields four dozens in mini muffin size. Forty-eight pieces might sound a LOT but trust me, everyone will be fighting over them you’d wish you baked more than one batch! Besides, they’re good outside of refrigeration for about 2 to 3 days and will keep in the freezer for about a month.
Just store in resealable bags or airtight containers to seal in freshness. When cravings hit, thaw in the refrigerator for 1 to 2 hours or at room temperature for about 30 minutes and they’re ready to enjoy!
How to Make Filipino Coconut Macaroons
- In a bowl, cream butter using a hand mixer on low speed. Add sugar and beat together until well blended and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add condensed milk and vanilla extract and continue to beat until blended.
- In a medium bowl, combine flour and desiccated coconut. Add to the egg mixture and beat until combined.
- Scoop into paper-lined mini muffin pans and bake in a 350 F oven for about 15 to 20 minutes or until golden and toothpick inserted in the center comes out clean.
- Remove macaroons from the baking pan and allow to cool for about 5 minutes on a wire rack.

Filipino Coconut Macaroons
Ingredients
- 1/3 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 can (14 ounces) sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 1/2 cup flour
- 2 cups desiccated coconut
Instructions
- Line mini muffin pans with paper cups. Set aside.
- In a bowl, cream butter using a hand mixer on low speed.
- Add sugar and beat together until well blended and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add condensed milk and vanilla extract and continue to beat until blended.

First of all let me say that I love the taste of your macaroons. I’ve tried it several times in the past and they were truly amazing. However, the last two times I’ve made them didn’t work out so well. The taste is the same but for whatever reason, they were all hollow in the middle. I was so disappointed as I made them for a fundraiser bake sale and I ended up not bringing anything. Where did I go wrong?

I am sorry but I don’t know what to say. If you’ve tried it several times in the past and had great results, that means the recipe does work. I wish I can pinpoint what went wrong the last couple of times but I wasn’t in the kitchen with you and there could be a lot of factors that affected the final product such as the oven not working properly etc.

I think the mini muffin pans are the smallest size but yes, please adjust cooking time if using a smaller or bigger size pan.

The recipe is based on using an oven and unfortunately, there can be a change in the final product if you use different equipment as called for in the recipe. The oven toaster might not have the stable heat/temperature as in the oven and this could affect the macaroons.

NO, not too sweet at all 🙂 It requires a whole can of sweetened condensed milk plus sugar but the recipe makes a lot, about 4 dozens.
It was so good. On point with the taste. I used salted butter, cannot remember if you specified salted or not. When I tasted it reminded me of when I was growing up in Cebu. So delicious and addicting. Happy to share this sweet with my kids. Almost made 4 dozen but not exact because first batch of 24 a few overflowed. Oh well Thank you. I guess you can use brown sugar, magiging iba lang ang lasa at texture nang konti. The flour is important para sa consistency nang macaroons na ito. You might want to search online for other macaroon recipes na hindi gumagamit nang flour ad use those instead to make sure tama ang resulta.

At room temperature, they should be ok up to 3 days, depending on the type of weather you have. In the refrigerator, probably a week. These macaroons don’t’ have preservatives so they don’t have a long shelf life. Just make sure they’re in an airtight container so they don’t dry out. Good luck sa business.

I use coconut pulp coz my mom used coconut milk often and I just thought why not make sonething from the tons of pulp she disposes.. Sayang kase😊
I just dried the pulp sa non stick pan for 10mins over low heat… Its as good as dessicated coconut.

Yes, you can freeze them. Just store in resealable bags or airtight containers and they should be good for up to 1 month.

I’ve never done this in a greased pan, the mixture is too loose to shape. I am not sure if it would work well but maybe bake in the pan like a cake and just cut into squares when done?

I am not sure how you can make these macaroons without an oven as they require baking. 🙁 Maybe try a toaster oven? I’ve never tried it personally but I think a few readers have had success using it.
Can cream of coconut be used in place of the sweetened condensed milk? It has the same consistency. The macaroons sound delicious!
I am not sure about replacing the condensed milk with coconut cream as it is actually thicker and more viscous. Is there a reason why you want to substitute?

I’ve never tried it with gluten-free flour but I don’t see why it won’t work. I am not familiar with GF baking but you might want to search online if you need to make adjustments in terms of liquid etc.

The texture will be different. Baking is a little bit more complicated than cooking and a simple change in ingredients can have a significant effect on the final product. I would suggest following the recipe as it is.

Add 4 to 5 minutes to the bake time. The best test is to insert a toothpick in the center of the macaroon, if it comes out clean they’re done.

Hi! I don’t have mini muffin pans, but I do have cupcake/muffin pans that comes in 6 holes…I think they are about 2-3 inches diameter. Is that okay to use? If so how much cooking time do they require?
I haven’t tried baking these macaroons in regular muffin tins but I am sure it would work. Increase bake time about 3 to 5 minutes, just check by inserting a toothpick in the center of macaroons. If it comes out clean, they are done.

I suppose you can use the sweetened one but decrease the amount of sugar lest the macaroons will be overwhelmingly sweet.

Use oatmeal in place of coconut and you’ll get yourself a healthier treat! And no worries because the taste is just the same. You can even put two or three pieces of raisins inside each mold for a surprise bite. Maybe Lalaine could write a recipe for my version. I’ll be waiting. 🙂

I don’t have a pandan macaroon yet but I think you can easily switch the flavor using the same recipe by just adding pandan extract instead of vanilla.

I’ve never used fresh coconut for these macaroons, I am a little worried they might change the texture due to their water content. I haven’t personally tried this but maybe you can dry the coconut at very low heat in the oven before using to kind of mimic the dehydrated coconut flakes.

They should be good for 1 to 2 days outside of refrigeration and a few days longer in the fridge. You can also freeze them in resealable bags and they should be good for a couple of months.

It came out more like a coconut cupcake rather than coconut macaroons. The top had a crispy crust with a chewy center just as I liked it, it’s also the part where the shredded coconut is visible, but the bottom was like a cupcake. It’s perfectly fine though. Can I ise frozen grated coconut
Frozen grated coconut has excess liquid and will affect the texture of the macaroons. I’ve never tried this personally but I think if you put the coconut on a baking sheet and dry them in the oven on very low heat for a few minutes, they might work.
I will definitely try this! I am in search of easy macaroons recipe. I tried one and it was an epic fail. I am fixing the recipe up to the last bit. This recipe seems to be more fair. The one I tried kasi asked for 400g of dessicated coconut for a can of condense.

I am sorry but I’ve never tried baking these other than with all purpose flour. Cake flour has less protein/gluten than regular flour so texture or structure of the macaroons might change. If you do try it, please let me know how it worked out.

Hi Ms. Lalaine! Thank you for sharing your recipe. I baked it twice. Masarap sabi ni hubby! I lessened the sugar to 1/2 cup, added 1 tsp baking powder and grated some cheese on top. I’ll definitely bake it again using desiccated coconut. I used fresh grated coconut kasi.

I don’t see why you can’t use cake flour, my friend sometimes uses polenta instead of the flour

I’ve never heard of custaroons until you mentioned them. Wala na kasi ako sa Pilipinas when they became popular in early 2000 kaya hindi ako familiar. I’ll try to experiment or do some research and see if I can replicate them at home. Stay tuned 🙂

I think coconut flakes will work as they are “dry” as dessicated coconut but the texture might be a little different as they are thicker while dessicated is more on the fine side.
When I saw the photos I thought cupcakes but read macaroons and I had to come and learn more. I would love these!

I wouldn’t recommend increasing the amount of butter. More does not necessarily mean better. Magiiba ang texture nang macaroons and they’ll fall flat. Please follow the recipe, you won’t be disappointed 🙂

I’ve never tried doing the macaroons sa turbo. It might work, just adjust bake time at mas mabilis magluto ang convection. A few readers mentioned doing it sa toaster oven also with good results. Masarap siya so I hope you find a way to make them.

Did you use sweetened coconut flakes? This might have made the macaroons too sweet. I use dessicated coconut (unsweetened) and I find the 3/4 cup sugar just right to pull the macaroons together.
Of course, the less sugar we use, the better for our health 🙂

I am sorry that you had problems with the recipe. The macaroons don’t really rise during baking so I am not sure what you mean that they “plopped in the center”. Did you overfill the muffin cups? Did you add and beat the eggs one at a time?

I’ve never tried them with fresh grated coconut, it might affect the product as fresh coconut has a higher water content than dessicated. You might want to dry the fresh grated coconut in the oven first to draw out excess moisture.

Please check if your oven is in Fahrenheit or Celsius. If it is in Celsius, eto ang simple conversion: 1 degree Celsius = 33.8 degrees Fahrenheit. Hope this helps. 🙂

I’ve never tried making these macaroons without sweetened condensed milk. You might be able to search online for possible alternatives to it. I’m thinking evaporated milk might be a good substitute but the consistency might change.

I don’t think mine did either. I just filled the cups to almost full that’s why they look like they did.
The recipe does not call for baking powder that’s why it will not rise. Fill the liner full when making these.
