Filipino coconut macaroons are your new favorite baked treat! Soft, chewy and chock-full of coconut flavor, these mini cupcakes are addictive.

Filipino Coconut Macaroons

Coconut macaroons are available at most major supermarkets here in the U.S., but although equally delicious, they’re a little different from Filipino coconut macaroons I grew up with which are denser and cake-like in texture.

Fortunately, a friend of mine emailed me a PDF of recipes from the Center of Philippine Concerns including one for macaroons. As I read through the list of ingredients, I knew it was the Filipino version I’ve been looking for!

Sure enough, the addition of flour to the basic ingredients of sweetened condensed milk, butter, eggs, and desiccated coconut resulted in more authentic Filipino coconut macaroons. Crisp and golden on the outside and moist and chewy on the inside, they’re addictive!

coconut macaroons with a mini muffin pan on the side

This recipe yields four dozens in mini muffin size.  Forty-eight pieces might sound a LOT but trust me, everyone will be fighting over them you’d wish you baked more than one batch! Besides, they’re good outside of refrigeration for about 2 to 3 days and will keep in the freezer for about a month.

Just store in resealable bags or airtight containers to seal in freshness. When cravings hit, thaw in the refrigerator for 1 to 2 hours or at room temperature for about 30 minutes and they’re ready to enjoy!

How to Make Filipino Coconut Macaroons

beating butter, sugar, eggs and flour mixture to make coconut macaroons

  • In a bowl, cream butter using a hand mixer on low speed. Add sugar and beat together until well blended and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add condensed milk and vanilla extract and continue to beat until blended.
  • In a medium bowl, combine flour and desiccated coconut. Add to the egg mixture and beat until combined.

  • Scoop into paper-lined mini muffin pans and bake in a 350 F oven for about 15 to 20 minutes or until golden and toothpick inserted in the center comes out clean.
  • Remove macaroons from the baking pan and allow to cool for about 5 minutes on a wire rack.

    Hello,
First of all let me say that I love the taste of your macaroons. I’ve tried it several times in the past and they were truly amazing. However, the last two times I’ve made them didn’t work out so well. The taste is the same but for whatever reason, they were all hollow in the middle. I was so disappointed as I made them for a fundraiser bake sale and I ended up not bringing anything. Where did I go wrong?

      Hello, Mary,

I am sorry but I don’t know what to say. If you’ve tried it several times in the past and had great results, that means the recipe does work. I wish I can pinpoint what went wrong the last couple of times but I wasn’t in the kitchen with you and there could be a lot of factors that affected the final product such as the oven not working properly etc.

Hi Lalaine, I’d really appreciated with your talents & blessings that you’ve shared with us. As a matter of fact, I already made this macaroons recipe many times & my friends really love it! Actually, I didn’t use sugar due to my daughter dont like too sweet so condensed milk is well enough for us. And I use organic unsalted butter, organic eggs & organic or unbleached flour & sooooooo delicious. My friends really love it & they want to order too. Thank you so much once again & I’m forever grateful. Take Care & God Bless you more! 🤗

I used to sell these macaroons and everyone liked them, so I think they’ll be a good recipe to start. They’re also very easy to make and you get 4 dozens per batch.

Hi Ms. Lalaine! Tried the recipe today using oven toaster and macaroon tins instead of muffin pan. Masarap naman po but ang nagawa ko is hindi kasing solid ng nasa pic nyo. Umalsa siya pero nawala rin at ang ending is lubog yung center. Any idea po kung saan ako nagkamali? Thanks!

      Hello, Lhot,

The recipe is based on using an oven and unfortunately, there can be a change in the final product if you use different equipment as called for in the recipe. The oven toaster might not have the stable heat/temperature as in the oven and this could affect the macaroons.

It was so good. On point with the taste. I used salted butter, cannot remember if you specified salted or not. When I tasted it reminded me of when I was growing up in Cebu. So delicious and addicting. Happy to share this sweet with my kids. Almost made 4 dozen but not exact because first batch of 24 a few overflowed. Oh well Thank you. I took pictures wished I could have added them here

I guess you can use brown sugar, magiging iba lang ang lasa at texture nang konti. The flour is important para sa consistency nang macaroons na ito. You might want to search online for other macaroon recipes na hindi gumagamit nang flour ad use those instead to make sure tama ang resulta.

At room temperature, they should be ok up to 3 days, depending on the type of weather you have. In the refrigerator, probably a week. These macaroons don’t’ have preservatives so they don’t have a long shelf life. Just make sure they’re in an airtight container so they don’t dry out. Good luck sa business.

Add 4 to 5 minutes to the bake time. The best test is to insert a toothpick in the center of the macaroon, if it comes out clean they’re done.

I haven’t tried baking these macaroons in regular muffin tins but I am sure it would work. Increase bake time about 3 to 5 minutes, just check by inserting a toothpick in the center of macaroons. If it comes out clean, they are done.

Hi lalaine, I am gonna make this today kaya lang yung nakuha ko sa seafood city was Baker’s angel flake sweetened coconut. Pwede ba ito? It looks like dessicated coconut to me pero parang medyo moist sya ng konti. Im super excited to try this, fave ko to since birth lol

      Hello Mia

I suppose you can use the sweetened one but decrease the amount of sugar lest the macaroons will be overwhelmingly sweet.

Thanks fo this! It’s my very first time to bake and it all went great! My husband and friends almost finished the batch that I made. They brought the remaining pieces to office the next day and immediately got order requests. Now having a little extra income.

Para sa akin tamang tama lang ang tamis, I really recommend adding the sugar because the recipe makes about 4 dozens, 48 pieces.

Hi there – I love your site and been using some of your recipes to recreate for my kids some of my childhood treats. I have a question regarding your Filipino style coconut macaroons, the nutrition content you have here, is that for the entire batch? So every 4 dozens, there are about 322 calories for all 48 pieces? That seems so good to be true. I mean wow!! That makes me very happy, But. first I want to confirm its correct.

        Many Thanks.

          Hello Jenny,

322 calories for 48 pieces would make me very happy, too, as I can eat a whole batch of these macaroons in one sitting! Unfortunately, the nutritional info is based on 4 pieces per 1 serving. I updated the recipe card to clarify this. 1 serving=4 pieces.

Use oatmeal in place of coconut and you’ll get yourself a healthier treat! And no worries because the taste is just the same. You can even put two or three pieces of raisins inside each mold for a surprise bite. Maybe Lalaine could write a recipe for my version. I’ll be waiting. 🙂

I don’t have a pandan macaroon yet but I think you can easily switch the flavor using the same recipe by just adding pandan extract instead of vanilla.

I’ve never used fresh coconut for these macaroons, I am a little worried they might change the texture due to their water content. I haven’t personally tried this but maybe you can dry the coconut at very low heat in the oven before using to kind of mimic the dehydrated coconut flakes.

Or can i just make the mixture , then thaw it when i need it and scoop them into the paper cases? Which do u think works better? I am planning to make this ahead of time but i don’t know if it can be frozen or not. Thank u so much.

Hello, Ms. Lalaine! I just finished baking this recipe and it came out perfect! They were economical yet so satisfying. Thanks for sharing. 🙂 I just have one concern. It came out more like a coconut cupcake rather than coconut macaroons. The top had a crispy crust with a chewy center just as I liked it, it’s also the part where the shredded coconut is visible, but the bottom was like a cupcake. It’s perfectly fine though. I just want to ask just in case I had done something wrong with it or if I’m the only one who had this result. Looking forward for your reply! Thanks!

Frozen grated coconut has excess liquid and will affect the texture of the macaroons. I’ve never tried this personally but I think if you put the coconut on a baking sheet and dry them in the oven on very low heat for a few minutes, they might work.

Hi Ms. Lalaine! Thank you for sharing your recipe. I baked it twice. Masarap sabi ni hubby! I lessened the sugar to 1/2 cup, added 1 tsp baking powder and grated some cheese on top. I’ll definitely bake it again using desiccated coconut. I used fresh grated coconut kasi.

I’ve never heard of custaroons until you mentioned them. Wala na kasi ako sa Pilipinas when they became popular in early 2000 kaya hindi ako familiar. I’ll try to experiment or do some research and see if I can replicate them at home. Stay tuned 🙂

      Hi Zenaida

I think coconut flakes will work as they are “dry” as dessicated coconut but the texture might be a little different as they are thicker while dessicated is more on the fine side.

1/3 cup would be a little less than 1 stick of butter which is 1/2 cup. The wrapper should have a grid to follow. 1/3 cup would be roughly 6 tablespoons. Hope this helps

The recipe ingredients and instructions are very clear. You need 1/3 cup of butter, about 6 tablespoons. You need 2 cups dessicated coconut. You can’t use “packs” as basis for measuring as they come in different weights and sizes. Use a standard measuring cup, please. Again 2 cups.

          Hello Claudia

The recipe requires less than 1 stick as 1 stick of butter is equals to 1/2 cup. You need only 1/3 cup. The wrapper of the butter is usually graduated, it has measurements you can use as guideline. 1/3 cup is about 6 tablespoons.

I tried this recipe today but its too sweet for my preference, the 3/4 cup sugar can be omitted as theres already 1 can of condensed milk, it will be healthier as its less sugar.

      Hi Mich

Did you use sweetened coconut flakes? This might have made the macaroons too sweet. I use dessicated coconut (unsweetened) and I find the 3/4 cup sugar just right to pull the macaroons together.

Of course, the less sugar we use, the better for our health 🙂

I am sorry that you had problems with the recipe. The macaroons don’t really rise during baking so I am not sure what you mean that they “plopped in the center”. Did you overfill the muffin cups? Did you add and beat the eggs one at a time?

I’ve never tried them with fresh grated coconut, it might affect the product as fresh coconut has a higher water content than dessicated. You might want to dry the fresh grated coconut in the oven first to draw out excess moisture.

Hi miss Lalaine thank you so much sa recipe. I baked 2 batches of macaroons yesterday i just add 1/8 tsp of salt for every recipe. Nagustuhan ng family ko ang daling naubos, I will make it again. Di na ako gumamit ng mixer. Ang daling gawin. God bless you always.

Please check if your oven is in Fahrenheit or Celsius. If it is in Celsius, eto ang simple conversion: 1 degree Celsius = 33.8 degrees Fahrenheit. Hope this helps. 🙂

    Hi Lalaine,

I just want to thank you for this very simple yet very yummy recipe. I tried it once and shared it to my friends, and told them it was free taste/sample (i was kidding of course). Just the next day, i received my very first order of macaroons, and a couple more..and more.. and more 😀 It has been giving me extra income for quite sometime now. So i thought I should let you know.

    Good Day!
I am newly wed. And your macaroon pinoy style recipe is the first recipe that I baked by myself. And I am so happy because I made one for my husband and he shared it with his co workers and they gave positive feedbacks!
He is a soldier so we are not together always. He texted me that my macaroons was a big hit among his coworkers and he is so proud of me! One also asked for the recipe so his wife can also bake.

    Thank you Maam Lalaine.
PS it was also a big hit among my co teachers and it will be “mabili” with my kindergarten kids. I dont use the sugar though. I just use the condensed milk as the sweetener
    .

I’ve never tried making these macaroons without sweetened condensed milk. You might be able to search online for possible alternatives to it. I’m thinking evaporated milk might be a good substitute but the consistency might change.
