- 1 (17.5 ouncepackage Betty Crocker Pumpkin Spice Cookie Mix
- ½ cup butter softened
- 1 egg
- 2 tablespoons water
For the Caramel Cream Cheese Frosting
- 4 ounces cream cheese room temperature
- 2 tablespoons butter room temperature
- 1 teaspoon vanilla extract
- 4 tablespoons caramel sauce or dulce de leche
- ½ cup powdered sugar
In a bowl, combine pumpkin spice cookie mix, butter, egg, and water. Stir together until soft dough forms.
Using a tablespoon or a 1-ounce cookie scoop, drop dough 2 inches apart onto ungreased cookie sheet. Bake in a 375 F oven (or 350 F for dark or nonstick cookie sheefor about 10 to 13 minutes or until edges are set. Cool for about 1 to 2 minutes before removing from cookie sheet. Allow to cool completely and then spread tops with the caramel cream cheese frosting.
