Ingredients

  • 1 (17.5 ouncepackage Betty Crocker Pumpkin Spice Cookie Mix
  • ½ cup butter softened
  • 1 egg
  • 2 tablespoons water

For the Caramel Cream Cheese Frosting

  • 4 ounces cream cheese room temperature
  • 2 tablespoons butter room temperature
  • 1 teaspoon vanilla extract
  • 4 tablespoons caramel sauce or dulce de leche
  • ½ cup powdered sugar

Instructions

  • In a bowl, combine pumpkin spice cookie mix, butter, egg, and water. Stir together until soft dough forms.
  • Using a tablespoon or a 1-ounce cookie scoop, drop dough 2 inches apart onto ungreased cookie sheet. Bake in a 375 F oven (or 350 F for dark or nonstick cookie sheefor about 10 to 13 minutes or until edges are set. Cool for about 1 to 2 minutes before removing from cookie sheet. Allow to cool completely and then spread tops with the caramel cream cheese frosting.

For the Caramel Cream Cheese Frosting

  • In a bowl, beat the cream cheese and butter for about 1 minute or until smooth and creamy. Add the caramel sauce and vanilla extract and continue and beat until combined. Add powdered sugar and continue to beat for about 2 minutes or until fluffy.
