Ingredients

  • 2 pounds about 4 cups) ripe jackfruit flesh, pitted
  • 1 cup water
  • 1 cup sugar

Instructions

  • Wash pitted jackfruit and drain well.
  • In a sauce pan over medium heat, combine water and sugar. Bring to a boil, stirring regularly until sugar is dissolved.
  • Add jackfruit and continue to cook for about 7 to 10 minutes or until syrup is thickened (the longer you cook, the thicker the syrup).
  • Remove from heat and allow to slightly cool. Transfer to clean jars with a tight-fitting lid and refrigerate for future use.

Notes

Langka secretes a white resin. Coat knife and chopping board with oil for easy clean-up. Coat your hands with oil or wear gloves to protect from the sticky substance.
