Chicken Adobo with Liver Spread

Adobong manok with liver spread is velvety rich and full of flavor. Easy to make in one pot and sure to be a family favorite!

Ingredients

  • 1 tablespoon canola oil
  • 1 head garlic, peeled and minced
  • 3 pounds chicken, cut into serving parts
  • 1 cup vinegar
  • ½ cup soy sauce
  • 1 cup water
  • 2 bay leaves
  • salt and pepper to taste
  • ¼ cup liver spread

Instructions

  • In a pot over medium heat, heat oil. Add garlic and cook until softened.
  • Add chicken and cook, stirring occasionally, until lightly browned and juices run clear.
  • Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes.
  • Add soy sauce, water, and bay leaves. Continue to boil for about 2 to 3 minutes.
  • Lower heat, cover and continue to cook for about 20 to 30 minutes or until chicken is cooked through and sauce is reduced.
  • Season with salt and pepper to taste.
  • Add liver spread and stir until well-dispersed. Cook for about 2 to 3 minutes or until sauce is thickened. Serve hot.

Notes

  • Allow the vinegar to boil, uncovered and without stirring for a good few minutes before adding the soy sauce and water to cook off the strong acid taste.
  • If potted liver pate is not available or you prefer a fresh alternative, boil about 1 cup of chicken livers until tender and fully cooked. Drain from liquid and mash with a fork or process in a blender until smooth. Use in the recipe as directed.
