Adobong Dilaw

Yellow Adobo with Turmeric is easy to make yet big on flavor. It's a delicious and filling dish that's perfect with steamed rice.

Ingredients

  • 1 tablespoon canola oil
  • 1 onion, peeled and chopped
  • 1 head garlic, peeled and minced
  • 1 thumb-size turmeric, peeled and julienned
  • 3 pounds pork belly, cut into 2-inch cubes
  • 1 cup vinegar
  • 1 ½ cups water
  • 2 bay leaves
  • salt and pepper to taste

Instructions

  • In a pot over medium heat, heat oil.
  • Add onions, garlic, and turmeric and cook until softened.
  • Add pork and cook, stirring occasionally, until lightly seared and evenly colored with turmeric.
  • Add vinegar and bring to a boil. Cook, uncovered and without stirring, for about 4 to 5 minutes.
  • Add water and bay leaves. Bring to a boil.
  • Lower heat, cover and cook for about 50 minutes to 1 hour or until pork is fork-tender and sauce is reduced.
  • Season with salt and pepper to taste. Serve hot.

Notes

  • Cut the pork in uniform size to ensure even cooking.
  • Pat dry the meat well so it will sear properly.
  • Allow the vinegar to boil uncovered and without stirring for a few minutes before adding the soy sauce and water to cook off the strong vinegar taste.
