- 4 cucumbers, peeled and cut into pieces
- ½ cup freshly-squeezed lime juice
- 4 tablespoons sugar
- 2 cups ice
In a blender, combine cucumbers, lime juice, sugar, and ice. Blend to desired consistency.
Pour into serving glasses and garnish with mint leaves, if desired.
- Substitute honey, agave, or coconut sugar if you prefer a healthier sweetener.
- To get the most juice out of the limes, roll them on a flat surface a few times to soften.
- To prepare the drink ahead of time, shred the cucumber instead and combine with the lime juice and about 4 cups water in a pitcher. Refrigerate until well-chilled and serve over ice.
