Cucumber Lime Smoothie

Ingredients

  • 4 cucumbers, peeled and cut into pieces
  • ½ cup freshly-squeezed lime juice
  • 4 tablespoons sugar
  • 2 cups ice

Instructions

  • In a blender, combine cucumbers, lime juice, sugar, and ice. Blend to desired consistency. 
  • Pour into serving glasses and garnish with mint leaves, if desired.

Notes

  • Substitute honey, agave, or coconut sugar if you prefer a healthier sweetener.
  • To get the most juice out of the limes, roll them on a flat surface a few times to soften.
  • To prepare the drink ahead of time, shred the cucumber instead and combine with the lime juice and about 4 cups water in a pitcher. Refrigerate until well-chilled and serve over ice.
